500g lean beef mince
1-2x brown onions
1x capsicum
1x can of diced tomatoes
½ can of corn kernels
1x can of red kidney beans
1x spice mix (taco mine, burrito mince)
Coriander


Heat a pan with a little oil. Chop up onions and capsicum.  Add onion to the hot pan first and cook for 3-4 minutes until a little soft.  Add mince to the pan and cook for 4-5 minutes.  Sprinkle the seasoning mix over the meat and stir through.  Empty contents of canned tomatoes, red kidney beans and corn into the pan.  Add cracked black pepper and allow the mix to cook for another 10 minutes on a medium simmering heat.  Prior to serving, roughly chop of coriander and sprinkle on top!

Serve with brown rice as a delicious post workout meal!  Can also be served with a heap of extra vegetables on the side for a low carb option!  This is a dish you seriously cant screw up!  

Tip: You can make your own spice mix up if you wish.  The packet option is fast, cheap and always tastes good!  Portion out into containers and freeze for easy lunch or dinner options!
