500g lean beef
2 tsp crushed garlic
1 tsp crushed ginger
3 tbsp sesame oil
1 red onion
2 whole celery sticks
2 carrots cut into sticks
2 cups of broccoli
1 capsicum
Handful of coriander roughly chopped


2 tbsp soy sauce
1 lemon juiced
1 tbsp sweet chili sauce
1 tbsp honey
2 tbsp hoi sin sauce
1 tbsp oyster sauce

Add oil to a hot pan. Place garlic and ginger and mix, followed by beef strips. Stir-fry until slightly browned, approximately 2-3 minutes. Add all vegetables and stir through well. In a separate bowl, add all sauce ingredients and mix. Pour sauce over beef and vegetables and cook for another 3 minutes. Garnish with coriander and season with salt and pepper.

Tip: I did not pre cook any of the vegetables as I want them left a little crunchy. This is to ensure when I microwave a meal in the week they are not left soggy and over cooked. If you are wanting to eat straight away I would pre cook the vegetables slightly.

Serve alone, or with brown rice as a post workout meal of nom noms!
