1 cup pitted dates
1 cup ground almonds
1/3 cup cacao powder
1 tbsp chia seeds
1/2 cup coconut oil
2 scoops lean whey protein powder (vanilla or chocolate)
1/3 cup of shredded/desiccated coconut
Soak your dates in hot water to soften them. Approximately 1-2 hours is enough. Blend the water and dates together into a paste.
Melt coconut oil in the microwave and add to your date paste. Add all dry ingredients slowly to your wet mixture. Checking the consistency as you go. Once all ingredients are thoroughly combined determine whether you need to add a bit more protein powder if slightly too wet.
Roll into balls and coat with coconut.
Stick in the fridge and enjoy!
Makes approx. 16-20 total depending on size of balls
